I’m so ecstatic to announce that Chris and I are about to embark on an epic adventure. In a couple of days, we’ll be flying to the Domincan Republic, and from there, we have a one way trip to Paris, where we’ll stay for a week. Then, we’ll be traveling around Europe for 7-8 weeks, with places like Bordeaux, San Sebastian, Venice and various parts of Croatia in mind.

My job is to make sure we have enough snacks during our journey, so we can continue eating healthy and not cave into pressure when the flight attendant offers us peanuts, pretzels and Pringles chips. I’ve already prepared some chopped veggies, beef sticks, and beef jerky, but something’s missing…something sweet.

Trying to think of a Valentine’s Day treat for your sweetheart? These chocolate covered strawberries are easy to make with only a few simple ingredients! Make ahead of time and enjoy for your Valentine’s Day celebration.

  • 1 carton of organic strawberries
  • 6 Tbsp raw cocoa powder
  • 1/4 c organic coconut oil
  • 2 Tbsp honey (this can be adjusted for desired level of sweetness)

I have been trying to find a good brownie recipe for years that I can eat AND tastes like an actual brownie. I used to be a junk food junkie in my previous life, so I am always looking for ways to recreate desserts I used to enjoy… but make them healthier. When I was younger we used to make those brownies from the box with the packet of peanut butter you put on top and use a knife to make it look marbled. Anyone remember those? I think they were Betty Crocker in a box… can’t remember. Anyways… I wanted to recreate those brownies!
