Homemade Creamy Almond Milk

August 17th, 2016 | Dairy Free, Recipes

  • 1 cup soaked almonds (soak almonds overnight and make the next day OR at least 8-12 hours)
  • 2 cups filtered water
  • 4-5 dates (pits removed)
  • 1/2 to 1 tsp vanilla
  • Option for making chocolate milk: 2 TBSP raw cocoa powder

Add almonds, water, dates and vanilla to a Vita-Mix or blender. Blend on high until blended well. Grab a bowl and fine mesh strainer. Strain liquid from blender into the bowl, removing the nut pulp. Set nut pulp aside.

You can eat the pulp or use it to make other desserts or dehydrate to make nut flour. The strained liquid is your creamy vanilla almond milk. Makes about 16 oz. of milk. Refrigerate for a few hours for best results before enjoying.

Chocolate milk: If you want chocolate almond milk, rinse out blender and add almond milk back in. Add the 2 TBSP of raw cocoa powder and blend.
