Tostada Meets Soft Taco

I call these a tostada meets a soft taco… maybe we’ll call it a tostado. I tried making the tortillas thinner and bigger but they would break, so I made them thicker and smaller. Voila! We have ourselves tostados. This lovely Coconut Flour Tortilla recipe is courtesy of Paleo Comfort Foods by Julie and Charles Mansfield.

We topped our tostados with Creamy Guacamole, sautéed onions, beef fajita meat and carrots (no nightshades for me).  Top with salsa, tomatoes, bell pepper or toppings of choice.  Enjoy!! Keep Reading…

We get a lot of questions asking about what to eat for breakfast when starting a REAL food, “paleo” type diet.  Most people do well for dinner, but get a little tripped up on what to make for breakfast and sometimes lunch too.  The first thing we like to tell people is to get rid of the idea that breakfast has to look or be a certain way.

In America, we have this concept that breakfast has to look like cereal, oatmeal, pancakes, pastries, doughnuts, muffins, fruit, fruit juice, etc.  Talk about starting the day with a sugar overload!  Try to step away from this mindset and switch to one that allows you to have anything for breakfast that you would have for lunch or dinner.  We both work full-time jobs and don’t have a whole lot of time in the morning. steak and egg

Steak and Eggs w/ Sauteed Kale and Tomatoes

A quick and easy dish… great for breakfast or any meal of the day. Enjoy!

Ingredients

  • 6oz grass-fed steak (I used thinly sliced top round)
  • 2 eggs
  • 1 c shredded kale
  • 1/4 c shredded carrots
  • 1 c sungold tomatoes (halved)
  • 1/4 c sliced onion
  1. Season and cook steak to desired doneness, remove from heat and let rest
  2. Saute veggies together in fat of choice (I used bacon grease) until kale is cooked and tomatoes start to soften
  3. Top with two fried eggs (cook with fat organic whole butter or coconut oil)
