Welcome to the final day of Paleo Pintxos Week! I can’t believe the week is over, and we’ll be leaving San Sebastian soon for the south of France, and then to Croatia for two weeks. San Sebastian has been so inspiring and we’re sad to go, but we’ll never forget the wonderful people we’ve met here and the amazing food we’ve eaten. There’s no doubt that we’ll continue to throw our own Pintxo Parties when we get back to Santa Monica, and who knows, perhaps we’ll be back in San Sebastian faster than you can say pintxo.

Paleo Pintxos Week – Recipe 6 of 7 – Lazy Deviled Eggs with Shrimp and Aioli

A popular pintxo we order time and time again in San Sebastian are the Gamba, Huevo y Mahonesa. Simply shrimp/prawns, a hard-boiled egg and mayonnaise. Similar to all the other pintxos in this town, each bar has their distinct way of making it; sometimes it’s skewered and lays flat on a plate. Other times, with pickled peppers and olives piled high.

We’ve seen them skewered with bacalao (salted cod), sometimes langoustine, crab meat or simply on a piece of bread along with a mound of cheese (ummmm, skip that one). The Gamba, Huevo y Mahonesa is similar to a deviled egg, but instead of removing the cooked yolk, mixing it with mayonnaise and piping it back onto the egg, they simply put mayo (or aioli) on the flat-side of the egg, thus allowing multiple toppings to be piled high, and secured with a long skewer. The egg then becomes the foundation of all good things. Yeah, we agree.

One of my favorite things to eat on this earth are omelets, so imagine my excitement when I found out they’re perfectly acceptable to eat in San Sebastian at any time of day – breakfast, lunch, dinner, hot or cold…Now that’s my kind of omelet!

 

The Tortilla Espanola (The Spanish Omelet) is one of the most traditional dishes of San Sebastian and there are plenty of variations for this local dish.

Welcome back to Day 4 of Paleo Pintxo Week! We’ve had quite a few friends reach out to us asking about life in San Sebastian and whether they should plan a vacation here soon. Answer, YES. Definitely come.

Come crush a bunch of pintxos and wash them down with a nice cider (called Sagardoa in Basque), which is made from fermented apple juice. The rule is, you have to pour it from the bottle from super high up so that it becomes more effervescent once it hits your glass. Skills. It’s quite a tasty drink, has no added sugar and it’s perfect in aiding digestion.

Some of the best things in life are often the most simple. In San Sebastian, life doesn’t get better and simpler than a pintxo.

The word pintxo (pronounced peen-cho) originates from the basque word for “spike,” representing the toothpick that fastens together the food and the bread on which they sit. Today, they include small bites of meats, eggs, vegetables, seafood, cheeses or any combination thereof usually served on a skewer, piled atop a slice of baguette to accompany a glass of wine, beer, or a light and refreshing txakoli (cha-ko-lee).

This is my new favorite thing… fermented cashew cheese!

I found the recipe on the Urban Poser blog and was super excited to make it.

I made it… LOVED it… and decided to make a “cheese” ball for my ladies get together the other night.

I served it with homemade almond thin crisps and sliced cucumber and it was a HUGE hit!

I uses chives and fresh oregano from my garden, but you could use other fresh herbs… be creative!

I haven’t been able to have cheese for many years now due to a dairy intolerance and this was a party for my palate!

This is a beautiful and delicious Paleo appetizer for any occasion.

The pancetta is amazing and adds wonderful flavor!

Ingredients

  • 1 dozen pasture-raised eggs (set 1 egg aside for the mayo)
  • 3 slices of smoked pancetta (quarter-inch thick)
  • 2 cloves of garlic
  • 2 large shallots
  • ¼ cup olive oil
  • 1 tablespoon of lemon juice
  • ¼ cup coconut oil
  • 1 tablespoon Dijon mustard
  • dash of paprika
  • salt and pepper

We had a little football gathering the other night and our friends made a batch of their delicious wings. I wasn’t able to have any because of the nightshade content, but they looked and smelled amazing!  Chad easily ate about 20 I think! These wings will be a great appetizer for any upcoming Super Bowl parties! Serve and enjoy with Paleo Ranch dipping sauce for the optimal experience.
