Dear Brenda and Chad,

Due your daily emails, recipe suggestions and detailed explanations completing the challenge was easier than expected! I must admit it did require spending more time planning, more time in the kitchen and more money in the grocery store. However, the positives definitely outweighed the negatives. You were right when you said “you have eaten this way, just not for thirty days straight”.

Within the 30 days, I didn’t have sugar, grains, dairy (besides eggs) or alcohol (with the exception of one glass of red wine on my husband’s birthday and on the day of my daughter’s engagement).  And I didn’t miss it at all!

  • I was never hungry when I didn’t miss a meal;
  • Felt more satisfied after each meal;
  • Did not crave sweets or snacks at any time of day, especially at night when I often snacked;
  • Did not have an energy crash in the late afternoon as I often did;
  • Lost 4-5 pounds;
  • Lost fat around my waist, stomach and back where I needed it most. My clothes fit more comfortably;
  • Ate foods I’ve never eaten before including bok choy, swiss chard, parsnips, and shallots;
  • Learned to make bullet proof coffee (could never drink coffee without cream and sugar or honey)

My husband also benefited from my effort since he ate the food I prepared and didn’t eat some food that he normally ate on a regular basis that I thought was healthy enough, like his daily morning yogurt.

I’ve always been an active person. I thought I could eat what I wanted because I was going to burn it off. This worked for most of my life from a weight perspective. My last employment was managing a fitness club where I worked out using weights at least 3-4 times a week. My weight has been a steady 127-132 lbs. for 30 years. However, upon leaving the gym (the owners decided to close) I was also diagnosed with Sjogren’s syndrome after a series of seemingly unrelated issues. After a couple of years, it became evident that the incidents were connected. I refuse to label myself as someone who suffers from an autoimmune disease. The conventional doctors say there is no cure. It’s clear to me that the food choices I’ve made have lead me to where I am today. I would like to try to feel better and to improve my health by changing how I view food.

I haven’t lifted weights in over a year (although my weight was still 131) my waistline and belly began to expand. I’m a 51-year old mother of two from Massachusetts and continue to walk, run and exercise, but not with the same intensity, enthusiasm and commitment. After the 30-Day Challenge I lost only 4-5 pounds. More importantly, I lost inches and feel much lighter.

In addition, I’ve suffered from anxiety and depression for as long as I can remember. I decided to take medication when my daughter and son entered High School so that we could all endure the teenage years without me adversely impacting their experiences. My only regret is that I didn’t learn to cook this way sooner so that they could have benefited from the example. My daughter graduates college in May 2018 and my son in May 2020. They’ll be thirty years ahead of me if they can embrace better nutritional practices early on, so I intend to provide the kitchen basics when they move out of the dorm and into their own homes.

Thank you, Chad and Brenda, for presenting the 30-day challenge in a way that was easy to follow and execute. I looked forward to the daily email and seeing the inbox recipe of the day. There are a few recipes I look forward to making again! Also, Chad’s weekly recipes helped to demonstrate how to prepare meals intended to be consumed in more than one day. We always eat leftovers in our house so it’s great to have food to eat at another meal or even in between if necessary.

One important thing I learned is that all fats and oils are not equal. I’ve always used butter and olive oil, just not the right kind! I’m now buying the healthier versions, and have added coconut oil to the mix. I also plan to minimize carbs and sweets forever!
