Paleo tortillas that don’t fall apart…and taste amazing!

Happy 4th of July Weekend!! 

So…I decided to start posting a “Paleo Secret Product of the Month” each month. I think it will be a great way to share new ideas to incorporate into the Paleo lifestyle.  I’m always finding new and delicious, Paleo-friendly products that I love and thought it would be helpful to share with you so you can check them out for yourself.

Paleo Secret Product of the Month: Otto’s Cassava Flour

Perhaps make some fajitas with some delicious Paleo tortillas for the 4th?

Chad and I went to the Paleo(fx) conference this year and sampled some of these Paleo-friendly, gluten-free & nut-free tortillas made from Otto’s cassava flour. For those on an auto-immune Paleo protocol…it’s your lucky day! No nuts! The tortillas are delicious and the texture is very similar to your typical wheat flour tortilla. Yum!!!

And…what’s awesome is that you can put your fixin’s in it and it doesn’t break like so many of the other tortillas made from alternative flours. They are quite pliable. We like to make fajitas with caramelized onions and add avocado or guacamole and raw veggies.

You may be asking what is cassava flour?

Cassava flour is made from 100% cassava (aka yuca) which is a root vegetable and is a staple food in Africa, Asia and Latin America. Otto’s cassava flour is 100% cassava with no added fillers. They also have a special method of peeling, drying and grinding the yuca that creates a lovely texture.

 

A few good pointers I learned from Otto’s informative website:

— You can use cassava flour as a 1:1 replacement for wheat in most recipes.

— Tapioca flour is the bleached and extracted starch of the cassava root. I did not know tapioca flour was bleached! Cassava flour is essentially a whole food and is the yuca in ground form.

— You can use cassava flour to make sandwich bread, crepes, pancakes, brownies, etc. Can’t wait to try!

Here are the tortilla recipe ingredients:

(you’ll need a rolling pin and parchment paper)

  • 3/4 cup cassava flour
  • 1/4 tsp sea salt
  • 2 TBSP olive oil
  • 1/3 cup warm water

You basically just mix all of the ingredients together in bowl. Next make a big dough ball and then break then into individual balls to make your tortillas. Roll the dough in between 2 pieces of parchment paper. Then I used a round lid to cut out a tortilla from the flattened dough. Next, you cook the tortilla in a pan for a few minutes on each side. Recipe usually makes about 6. You could definitely double recipe and save for later!

    I did a search on the yucca plant because I thought I heard that it was a GMO crop and it is. Do you know if Otto’s Cassava flour is non-GMO and organic?

      Susan…Great question! I contacted Otto’s and they confirmed that it is non-GMO. I’m waiting to hear back about the organic status. Will keep you posted!
