Vietnamese Shrimp with Honey

Vietnamese Honey Shrimp

Today’s recipe of Vietnamese Shrimp with Honey comes from Hoi An, Vietnam.  After our last cooking class in Hanoi we were so excited to take one in Hoi An, one of the main culinary capitals of Vietnam.  This was probably the best cooking classes we’ve ever taken!  Van is the owner of the Green Bamboo Cooking School and she is amazing!  We each chose a dish to make for the class and then she took us to the morning market to buy all the ingredients for each of our dishes.  We went back to her cooking school and prepped our dishes and then cooked them all one by one, so we could all learn how to prepare each dish.  We had everything from papaya salad to stewed pork belly. Here’s a delicious, quick and easy stir-fry shrimp recipe we both loved during the class.

1 lb of fresh shrimp
1 tsp garlic, chopped
1 tsp shallot, chopped
coconut oil for frying
salt and pepper to taste

Honey sauce:
5 tbsp fish sauce
2 tbsp raw honey
1 tbsp garlic, chopped
1 tsp ground pepper
1-2 small hot chilis, chopped (depending on how spicy you like things)

1. Peel shrimp and devein. Add garlic, shallot and salt and pepper to shrimp and marinate for 30 minutes.
2. Mix all ingredients of honey sauce into a bowl.
3. Heat coconut oil in pan and fry shrimp for 1-2 minutes.
4. Add the honey sauce and stir until the sauce thickens, but don’t let the sauce burn.
*Note – if the shrimp have a lot of water while frying, remove them from pan into a bowl and cook the honey sauce in the pan to thicken and then return the shrimp to the pan.  This will give the shrimp more flavor and minimize the chances of overcooking.
5. Remove from heat and serve immediately and dig in!
