Grain-Free Chocolate-Chocolate Chip Muffins

Chocolate Chip Muffins

Hey everyone!  I’ve been playing around with my paleo muffin recipes and finally perfected these awesome grain-free chocolate-chocolate chip muffins.  They were gone within 5 minutes of serving to some friends, so I think that’s a good sign.

1 cup almond flour
1/4 cup coconut flour
4 tbsp cocoa powder
1 1/2 tsp baking soda
1 tsp cinnamon
pinch of salt
3 tbsp butter (melted)
2 eggs
1 cup apple sauce
1 tsp apple cider vinegar
2 tbsp honey
1 tsp vanilla
1/2 cup of dark chocolate chips (70%)
1 tbsp of coconut oil

1. Pre-heat oven to 350°F.
2. Combine all dry ingredients (almond flour, coconut flour, cocoa powder, baking soda, cinnamon and salt) into a bowl and mix.
3. Combine all wet ingredients into another bowl (melted butter, eggs, apple sauce, honey, vanilla and apple cider vinegar) and mix.  Add apple cider vinegar last.
4. Grease muffin tin with melted coconut oil.
5. Add wet ingredients to the dry ingredients and mix. A thick dough will form.
6. Add chocolate chips into the batter.
7. Spoon ~1 tbsp of batter into each muffin base.  Do this quickly because after combining all the ingredients, the apple cider vinegar and the baking soda will begin to react and cause the dough to rise.
8. Place in center rack of oven and bake for ~20 minutes.
9. Let cool before serving, or get in there hot while the chocolate chips are still soft! Enjoy!
