Paleo Cranberry Breakfast Muffins

Breakfast Muffins

Okay, these breakfast muffins are pretty amazing!  I’ve slowly, but surely perfected this recipe over the last year or so and they are always a huge hit. They are a great quick and easy breakfast or an afternoon snack!

Dry Ingredients
1 cup almond flour
1/4 cup coconut flour
1 tsp cinnamon
1/4 tsp salt
1 1/2 tsp baking soda

Wet Ingredients
2 eggs
1 cup apple sauce
3 1/2 tbsp butter
1 tsp vanilla extract
2 tbsp honey
1 tsp apple cider vinegar

Extra Goodies
1/2 cup dried cranberries
1/4 cup pepitas (pumpkin seeds)


1. Set oven to 350°F.
2. Combine dry ingredients into a bowl and mix.
3. Combine eggs, apple sauce, vanilla and honey into a separate bowl and whisk.
4. Melt butter and slowly add to the bowl of wet ingredients and whisk constantly.
5. Add apple cider vinegar to wet ingredients and stir thoroughly.
6. Prior to combining all of the dry and wet ingredients, prepare a muffin tin pan by greasing it with coconut oil liberally.  (Note: after combing all the ingredients, the apple cider vinegar and baking soda will begin to react and cause the dough to rise, so you want to do the rest of this relatively quickly and get the pan in the oven!)
7. Add dry ingredients into wet ingredients and mix thoroughly and quickly.
8. Add cranberries and pepitas to mixture and fold into batter.
9. Spoon batter into muffin tin, will make about 9-10 muffins.

Muffins Pre Bake
10. Place muffin tin into center rack of oven for ~25 minutes, remove and set aside to cool.
11. Remove muffins from tin and devour!!

    Looks tasty and will try it. Very similar to a zucchini cookies I make and drop on a cookie sheet.

    I make these low carb by using sour cream instead of applesauce and 1/4 cup Stevia instead of honey. I sometimes add a chopped up apple to batter too! Yum.

  6. I loved these…didn’t have pepita seeds so I substituted pecans. Served in a bread basket for Thanksgiving and all the women asked for the recipe…they were excited to learn more about Paleo after tasting these little treats! The second time I made them I only had 1/2 cup of applesauce on hand….and while they were still good that extra applesauce really makes a difference in flavor and moistness! So follow the recipe it’s easy and great tasting!
