Paleo Pintxos Week Finale – Recipe Roundup and More!

Welcome to the final day of Paleo Pintxos Week! I can’t believe the week is over, and we’ll be leaving San Sebastian soon for the south of France, and then to Croatia for two weeks. San Sebastian has been so inspiring and we’re sad to go, but we’ll never forget the wonderful people we’ve met here and the amazing food we’ve eaten. There’s no doubt that we’ll continue to throw our own Pintxo Parties when we get back to Santa Monica, and who knows, perhaps we’ll be back in San Sebastian faster than you can say pintxo.

For today, I wanted to roundup all the pintxo recipes so that you have them easy to access in one post, plus 3 more pintxo ideas that you can simply throw on a skewer and either broil them in the oven or fire them up on the grill. Perfect for the summer.

Chorizo, Green Pepper and Onion
Put them under the broiler for 4 minutes on each side, or grill until chorizo is cooked Chorizo, Green Pepper and Onion

How did it take so long for us to discover these? So freaking good. Put them under the broiler for 5 minutes on each side, or grill until chorizo and bacon are cooked to your liking.
