Cauliflower Garlic Mashed Taters

Mashed potatoes is a traditional Thanksgiving menu item.  Try substituting with these “taters” made from cauliflower.

It’s a quick and easy recipe that we enjoy for Thanksgiving and all year round! We actually think they taste better than potatoes!

 

Ingredients

  • 2 small to medium heads of cauliflower (chopped)
  • 2 tbsp organic whole butter or coconut oil
  • 2 minced garlic cloves
  • 1/2 tsp salt

In a large pot use a steam basket to steam chopped cauliflower until soft. Place cauliflower in a food processor. Add butter or coconut oil, garlic and salt. Process until smooth and creamy. Adjust taste by adding in more butter or coconut oil and salt as desired. Enjoy!

    This was probably one of my favorite recipes on the Whole30 challenge, the consistency is very much like mashed potatoes!

    After making this tonight and raving about it so much, I was asked to bring it for Thanksgiving – yay! But because I am lame in the kitchen, I need to ask, what did ya’ll chop and serve on top of it? (As shown in picture?)

    This was really easy to make and fairly tasty. We found the garlic taste to be quite strong, in fact it gave the mash a bit too much kick or too strong of a taste, think I’ll try one clove next time…
