Salmon Salad with Avocado
- 2 cans of wild salmon (or 1lb baked salmon, flaked, chilled)
- 3T of mayo (I used homemade avocado mayo!)
- 1t dijon
- .25 finely chopped dill pickle
- 1t minced red onion
- .5c chopped celery
- dash of tabasco
- season with S&P
- garnish with fresh chives
*options – 1 chopped hard-boiled egg, 1T chopped capers!
Simply mix in a bowl and serve over sliced avocado!
