Lamb Burgers caramelized onions avocado

These burgers are quick, easy and taste delicious! We threw them on the grill and served them with caramelized onions, avocado and wrapped them in romaine lettuce.  To top it off, we served it with a side of mashed sweet potatoes (topped with goat butter and cinnamon).  Yum!

  • 1 lb grass-fed ground lamb or ground meat of choice
  • 1 head of romaine lettuce
  • 2 onions (sliced)
  • 1 avocado (sliced)
  • 1 bunch of parsley (finely chopped)
  • 1 tbsp of garlic powder
  • 1 tsp sea salt
  • ground pepper
  • coconut oil for cooking onions

Fire up the grill! While grill warms up, saute onions at medium-high heat in coconut oil using a cast iron skillet. Cook until caramelized. Make lamb patties by putting meat into a bowl and adding in garlic powder, salt, pepper and 1/2 to 3/4 of the chopped parsley. Mix together and form into 3-4 patties (we did 3). Throw the patties on the grill. Slice the avocado thinly. When burgers are cooked to your liking, place on a piece of romaine lettuce for your make-shift bun. Top burger with avocado and caramelized onions. Sprinkle left-over parsley on top. Add any other fixins’ you like!

If you would like to serve the burgers with mashed sweet potatoes like in the picture, begin by putting sweet potatoes in the oven first thing since they will take a while to cook. Turn oven to 400 deg. Rub sweet potatoes with coconut oil and place in a baking dish. Cook for 30-45 minutes depending on the size. They are finished when you can pierce them with a fork and it goes through easily. Take out of the oven and let it cool. Take out the insides, mash it up with a fork and serve. Top with butter or coconut oil and cinnamon.
